Fill a 6-ounce heatproof mug or glass with boiling water and set aside, 1 minute. Pour out the water Add the honey to the warmed glass. then add your choice of spirit - 2 ounces of scotch, bourbon, rye, Irish whiskey, dark rum or cognac. Top with boiling water and stir until the honey is dissolved. Add a bit of lemon juice and garnish with the lemon peel, cinnamon stick and star anise, if desired. Pairs well with a charcuterie board of mixed cured meats and a variety of cheeses.
